Basic Analytical Tests

There are a number of analytical tests necessary to assure safety and quality of food products. While many entrepreneurs and small food processors understand the importance of these tests, they are often uncertain how to do the tests and what the tests actually tell them. In addition, they are hesitant to invest in the instruments necessary to perform the tests. AFIC offers the instruments necessary for many of these tests along with the expertise to train processors in their use and in interpretation of the data obtained.
Testing services available through AFIC include:

  • pH/acidity of acidified foods
  • Water activity of low moisture foods
  • Sugar levels (soluble solids) of jams and jellies
