Process Authority Certification
AFIC staff can provide analysis of your product(s) to determine appropriate data for a Process Authority Certification letter. The letter is required by the FDA upon filling out form 2541E. Examples of acidified products that require the letter are most barbecue sauces and salsas. To start this process, complete the Product Classification Form. When completing this form, you must provide a list of all product ingredients and the weight (preferably metric) of each. In addition, your process description must include all process steps. After review of your form, AFIC will contact you with further instructions. All information provided to AFIC for use in analysis remains confidential.
